Café Martini at Apollo Inn

Welcome to our new mini-series, Drinks We Love, but Wouldn’t Make at Home, filmed at one of our favourite bars in the world—Melbourne’s own, Apollo Inn.

In our first episode, we’re experiencing the Café Martini (not to be confused with the Espresso Martini), made by Apollo Inn and Gimlet bar manager Lachlan Bentley. The Café Martini takes three days to prepare and is crafted with Ketel One Vodka, Fino Sherry, dulce de leche, and Industry Beans cold brew.

A delicious coffee-forward cocktail, it is slightly sweet with a mellow toffee/butterscotch flavour, while the Fino Sherry cuts through with a touch of acidity and salinity.
